Cucumber and Tomato Farro Salad

  • 1 c farro
  • 2 1/2 c water
  • 1 cucumber
  • 2 c grape tomatoes
  • 1 red bell pepper
  • 1 bunch fresh parsley
  • 1/4 c fresh mint leaves
  • 4 oz sliced olives
  • 1/4 c Greek vinaigrette


  1. Cook farro in water according to package directions.
  2. Dice cucumber, tomatoes, and bell pepper. Finely chop parsley and mint.
  3. When farro is done cooking, allow to cool. Once cool, combine farro and all other ingredients in a large bowl and stir well to mix. If desired, place in fridge for 30 minutes to chill, or serve immediately.
