Homemade Tater Tot Hotdish Casserole

Ingredients

  • cooking spray
  • 1 onion
  • 8 oz sliced mushrooms
  • 4 oz cream cheese
  • 2 tbsp. butter
  • 2 tsp. minced garlic
  • 1 lb ground beef
  • 2 tbsp. soy sauce
  • 1 tbsp. hot sauce
  • 1 tbsp. Worcestershire sauce
  • 1 tsp. sea salt
  • 1 tsp. ground black pepper
  • 2/3 c beef broth
  • 2 c mixed vegetables
  • 32 oz tater tots
  • 1 c shredded cheddar cheese

Instructions

  1. Preheat oven to 450F, or the recommended temperature on tater tot package. Lightly grease a baking pan with cooking spray.
  2. Peel and finely dice onion. Dice mushrooms or leave sliced, if preferred. Cut cream cheese into cubes.
  3. Melt butter over medium-high heat in a large, sided skillet. Add onions, garlic, and mushrooms. Cook until browned, about 8 minutes.
  4. Add ground beef. Using a spatula, break up beef as it browns.
  5. When beef is cooked, add in soy sauce, hot sauce, Worcestershire sauce, salt, and pepper. Stir well to combine.
  6. Stir in cream cheese. Once it is melted, add in beef broth. Cook for 2-3 minutes to allow sauce to thicken slightly. You want sauce to coat the back of a spoon but not get too thick. Add a little more broth, if needed.
  7. Add veggies and mix well. Taste filling and adjust seasonings.
  8. Pour filling into prepared baking pan. Place frozen tater tots on top of mixture. Lay them in rows so they will fit in one, even layer.
  9. Place in oven and cook for 16-18 minutes, or as directed on tater tot package. You can add up to 5 additional minutes if you want the tater tots extra crispy.
  10. Sprinkle cheese on top and cook for 5 more minutes, until cheese is melted.
  11. Let sit for a few minutes before serving. Enjoy!
