Salsa Rojas

Ingredients
- 2 lb Roma tomatoes
- 1 yellow onion
- 1 jalapeño pepper
- 8 cloves garlic
- 1 lime
- 1/2 bunch cilantro
- 2 tbsp. extra virgin olive oil
- 3/4 tsp. sea salt, or to taste
Instructions
- Place oven rack in top third of oven. Turn broiler on high.
- Slice tomatoes in half. Peel and cut onion in half. Cut jalapeño in half. Remove seeds and membranes for a milder salsa.
- Lightly smash and peel garlic cloves. Juice lime and roughly chop cilantro
- Place tomatoes, onions, and jalapeños, cut side down, on rimmed baking sheet. Scatter garlic around. Drizzle with olive oil and toss veggies to coat.
- Broil veggies for 10-15 minutes or until veggies have some char and are very soft.
- Let cool for a few minutes.
- Use tongs to place veggies into blender. Blend until smooth.
- Add chopped cilantro, lime juice and salt. Blend until combined and smooth.
- Serve salsa rojas warm or chilled. Salsa will keep in an airtight container in the fridge for up to 5 days.
