Ingredients
- 1 puff pastry sheet
- cooking spray
- 1/2 onion
- 2 eggs
- 1 tbsp. water
- 1/2 c heavy cream
- 3/4 c breadcrumbs
- 1 lb ground beef
- 1/4 c tomato paste
- 2 tsp. minced garlic
- 1/2 tsp. dried thyme, optional
- 1 tsp. sea salt, to taste
- 1/4 tsp. ground black pepper
- candy eyes, optional
- 1 c ketchup, or barbecue sauce
Instructions
- Set 1 sheet puff pastry (per 4 servings) out to thaw, if frozen.
- Preheat oven to 375F. Spray a rimmed baking sheet with cooking spray.
- Peel and mince onions and set aside.
- Make egg wash by cracking half of the eggs into a small bowl. Add water and beat until foamy; set aside.
- In a large bowl, beat remaining egg. Mix in cream and bread crumbs.
- Using clean hands, add the beef into egg mixture, and combine well.
- Add onion, tomato paste, garlic, thyme, salt, and pepper to meat mixture and combine.
- Divide meat into quarters (per 4 servings.) Shape each portion into an individual, oval-shaped loaf and place on prepared baking sheet.
- Bake for 20 minutes. Remove from oven and allow to cool for 15 minutes. Turn oven up to 425F.
- While meatloaves cool, using a pizza cutter or sharp knife, cut puff pastry into long strips, a little larger than 1/4 inch wide. You can eyeball it; it doesn’t need to be exact.
- Once meatloaves have cooled a little, take pastry strips and drape them across each meatloaf to look like mummy bandages. Make sure to leave an open space for the eyes.
- Take egg wash, give it a quick stir, and paint it over the puff pastry strips.
- Place in oven for another 20 minutes. Meatloaves should register between 155F and 165F when done, and pastry should be golden brown.
- Remove from oven and carefully place candy eyes on mummies.
- Allow meatloaves to cool for a few minutes before removing them to a serving dish.
- Serve warm with ketchup or barbecue sauce on the side for a spooky, delicious dinner!
