Piña Colada Ice Cream

Ingredients
- 8 eggs
- 1/2 c honey
- 1 c dried pineapple
- 2 1/2 c heavy cream
- 8 oz full fat coconut milk
- 1 c shredded coconut
- 1 tbsp. vanilla
- 1/8 tsp. sea salt
- 2 tbsp. light rum, optional
Instructions
- Separate half the eggs. Refrigerate the whites for another recipe.
- In a large mixing bowl, beat the yolks and the remaining eggs until smooth, and then completely combine and dissolve honey in eggs. (The eggs help to dissolve the honey nicely.)
- Chop dried pineapple, if not already, in bite-sized pieces.
- Add pineapple and all other ingredients to mixing bowl and completely combine.
- Turn on ice cream machine. Add whisked together ingredients to already running ice cream machine. Make ice cream according to manufacturer's instructions.
- Pack into a freezer safe container. When serving, top with a pinch of shredded coconut for a pretty presentation.
