Piña Colada Ice Cream

Ingredients

  • 8 eggs
  • 1/2 c honey
  • 1 c dried pineapple
  • 2 1/2 c heavy cream
  • 8 oz full fat coconut milk
  • 1 c shredded coconut
  • 1 tbsp. vanilla
  • 1/8 tsp. sea salt
  • 2 tbsp. light rum, optional

Instructions

  1. Separate half the eggs. Refrigerate the whites for another recipe.
  2. In a large mixing bowl, beat the yolks and the remaining eggs until smooth, and then completely combine and dissolve honey in eggs. (The eggs help to dissolve the honey nicely.)
  3. Chop dried pineapple, if not already, in bite-sized pieces.
  4. Add pineapple and all other ingredients to mixing bowl and completely combine.
  5. Turn on ice cream machine. Add whisked together ingredients to already running ice cream machine. Make ice cream according to manufacturer's instructions.
  6. Pack into a freezer safe container. When serving, top with a pinch of shredded coconut for a pretty presentation.
