Ingredients
- 8 oz elbow macaroni
- 3 eggs
- 1/2 yellow bell pepper, or color of choice
- 1/2 red onion
- 2 celery stalks
- 2 dill pickle spears, or more to taste
- 1/4 fresh parsley bunch, optional
- 2/3 c mayonnaise
- 1 tbsp. yellow mustard
- 1 tbsp. red wine vinegar
- 1 tbsp. honey
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
- 1 tbsp. dill pickle brine
Instructions
- Cook pasta according to directions on package. Drain and set in fridge to cool.
- Place eggs in a saucepan and cover completely with water. Set over high heat to bring to a boil.
- As soon as the water is boiling, cover with a lid and remove from heat. Set a 10 minute timer.
- Fill a large bowl with ice water. When the 10 minutes are up, gently transfer eggs to the ice water. Set aside to cool.
- Chop bell pepper. Peel and finely dice onion. Slice celery. Dice dill pickles. Chop parsley and set aside for garnish.
- Peel and dice hard-boiled eggs.
- Place eggs and veggies into a large serving bowl.
- Add mayonnaise, mustard, vinegar, honey, garlic powder, onion powder, salt, black pepper, and pickle brine.
- Add in chilled macaroni and diced hard-boiled eggs.
- Gently mix until the dressing is incorporated and everything is evenly coated. Sprinkle parsley over top.
- Place salad in fridge for at least 2 hours and up to overnight, to allow flavors to mingle.
- Serve cold and enjoy! Leftover salad can be stored in an airtight container in the fridge for 5 days.
