Jamaican Jerk Chicken Lettuce Cups

Ingredients
For the lime mayo:
- 1 lime
- 1 tsp. minced garlic
- 1/2 c mayonnaise
- 1/2 tsp. garlic powder
- 1/8 tsp. sea salt, to taste
For the chicken:
- 1 lime, small
- 1 red bell pepper
- 1 tsp. dried thyme
- 1 lb cooked chicken
- 2 tbsp. coconut oil
- 1 tbsp. jerk seasoning, plus more to season to your preference
For the tacos:
- 1 butter lettuce head
Instructions
For the lime mayo:
- Juice and zest lime.
- In a small bowl, combine all ingredients. If possible, prepare a few hours to a day before, cover, and chill in fridge to allow flavors to meld.
For the chicken:
- Juice the lime. Finely dice bell pepper. Crush thyme. Shred the chicken.
- Melt coconut oil in a pan over medium heat. Add jerk seasoning, and sauté for a minute to release the flavors.
- Add the shredded chicken and cook for 2-3 minutes to warm through. Add thyme and adjust seasoning to your preference.
- Turn off heat. Stir in lime juice.
For the tacos:
- Separate the head of lettuce into whole leaves.
- Spoon some chicken onto the center of each lettuce wrap. Top with diced bell pepper and lime mayo. Roll up and serve immediately.
Note:
