Black Bean Nachos

Ingredients

  • 4 green onions
  • 2 avocados
  • 1 c cooked black beans
  • parchment paper
  • 6 c tortilla chips, plus more to taste
  • 2 c shredded cheddar cheese
  • 1/2 c salsa
  • 3/4 c full fat Greek yogurt

Instructions

  1. Preheat oven to 375F.
  2. Dice the green onions. Peel, pit, and chop the avocados. Drain beans and set aside.
  3. Line baking sheet with parchment paper. Arrange chips into a thin layer. Top with cheese and beans.
  4. Place nachos in oven for 3-5 minutes or until cheese has just melted.
  5. Remove nachos and garnish with green onions, avocado, salsa, and yogurt.
  6. Serve immediately.
