With plenty of garlic, a touch of sea salt, and a natural sugar called sucanat (feel free to substitute your favorite natural sugar – coconut sugar would be great!) – even the pickiest eater will devour your dinner that’s so “clean eating” that it’s compliant for the autoimmune protocol diet.

What’s more, this easy dish becomes a quick protein that you can grab later when time is short.

Made enough for leftovers? Toss it into Filipino Pancit and recreate the taste of delicious take-out. Chop it into cubes for a mason jar salad. Or slice it cold and pack into school lunches for the next day.

Sweet Garlic Chicken

Ingredients

  • 6 cloves garlic
  • 4 chicken breasts
  • 4 tbsp. extra virgin olive oil, plus more for drizzling
  • 2 tsp. coarse sea salt
  • 4 tbsp. sucanat

Instructions

  1. Preheat oven to 450F. Mince garlic.
  2. Place chicken breasts in baking dish. Drizzle with olive oil and sprinkle both sides with salt.
  3. In a saucepan, heat olive oil over medium heat. Add garlic. Cook about 2 minutes. Turn off the heat and add the sucanat, stirring until combined. Spread the topping mixture evenly over each chicken piece on the side that is facing up.
  4. Bake chicken for 15-20 minutes. Remove and serve.

  • Excellent Recipe. I ate it with the Coconut Cauliflower Rice and it was a great meal. However, I would suggest doubling the size of the sauce in order to fully cover the chicken pieces as it looks in the picture.


  • easy to make, hard to mess up. pan cooked my chicken, used coconut oils instead of olive oil and still loved the result. sweet, garlicky and super easy to make!!
