Chilis and tomatoes may be off the menu as you follow an AIP diet and eat your way to better health. But this southwest salad and Tex-Mex cuisine are still doable.
The secret is to get creative. For example, switch out bell pepper with pungent and peppery radish. And instead of tomatoes, use another (slightly sweeter) fruit: mango.
Paired with plantain chips and crispy, tangy, melt-in-your-mouth pork, you won’t even miss those nightshades.
