Chilis and tomatoes may be off the menu as you follow an AIP diet and eat your way to better health. But this southwest salad and Tex-Mex cuisine are still doable.

The secret is to get creative. For example, switch out bell pepper with pungent and peppery radish. And instead of tomatoes, use another (slightly sweeter) fruit: mango.

Paired with plantain chips and crispy, tangy, melt-in-your-mouth pork, you won’t even miss those nightshades. If you’re looking for a recipe for shredded pork, this slow cooked Cuban pork is a good one. Just be sure to leave out non-compliant AIP spices: mustard, allspice, paprika, chili, and pepper.

Ingredients

For the meat

  • 2 limes
  • 1 tablespoon coconut oil, or fat of choice
  • 1 pound shredded pork
  • 1 teaspoon coarse sea salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder

For the dressing

  • 1 avocado
  • 1 clove garlic
  • 2 limes
  • 13 1/2 ounces coconut milk
  • 3 tablespoons olive oil
  • 1 cup cilantro
  • 2 teaspoons coarse sea salt
  • 1/4 cup water, plus more to thin

For the salad

  • 1 large romaine lettuce
  • 3 avocados
  • 8 green onions
  • 1 bunch radish
  • 2 mangoes
  • 2 cups plantain chips

Instructions

  1. For the meat: Juice and zest limes. Heat a pan over medium heat. Add fat of choice and saute meat with salt, spices, lime juice, and lime zest until meat is warmed through. Remove from heat.
  2. For the dressing: Peel and pit avocado. Peel garlic. Juice limes. Scoop the thick stuff from the top of a can of full fat coconut milk, discard the liquid, and add to food processor or blender. Combine all other dressing ingredients and process until creamy smooth. Thin with additional water to desired consistency.
  3. For the salad: Chop lettuce. Peel, pit, and slice avocados. Chop green onions. Thinly slice radishes. Peel and chop mangoes into 3/4 inch chunks.
  4. Combine salad ingredients in bowl. Add cooked meat, toss with creamy avocado dressing, top with crushed plantain chips, and enjoy!
