Cucumber and Tomato Farro Salad

Ingredients
- 1 c farro
- 2 1/2 c water
- 1 cucumber
- 2 c grape tomatoes
- 1 red bell pepper
- 1 bunch fresh parsley
- 1/4 c fresh mint leaves
- 4 oz sliced olives
- 1/4 c Greek vinaigrette
Instructions
- Cook farro in water according to package directions.
- Dice cucumber, tomatoes, and bell pepper. Finely chop parsley and mint.
- When farro is done cooking, allow to cool. Once cool, combine farro and all other ingredients in a large bowl and stir well to mix. If desired, place in fridge for 30 minutes to chill, or serve immediately.
