Just in case you’ve landed here by searching chicken burger recipes and you’re not sure what AIP-compliant means, here’s the scoop. AIP stands for the autoimmune protocol diet. In short, this is typically seen as an intense way of eating but one that naturally helps eliminate autoimmune issues with food.
What doctors are starting to find is that most autoimmune issues are affected by the types of food people eat. To help become less dependent on pharmaceutical medicines, folks with these health issues are looking to dietary changes to help them on their road to recovery. What’s in Greek Chicken Burgers?
We already mentioned that you’ll have most of the ingredients in your pantry. In fact, there are only two ingredients that you’ll probably need to buy – green onions and ground chicken. If ground chicken is a little pricey at your store, consider purchasing chicken breast or boneless chicken thighs and using a meat grinder (or food processor) to make your own. Other than the chicken and green onion, grab:
- Garlic cloves
- Frozen spinach
- Dried oregano
- Dried basil
- Fine sea salt
- Refined coconut oil
How to Make Greek Chicken Burgers
These Greek chicken burgers come together like any regular burger but are so much more fun and different. Mince the garlic and finely chop the green onions and saute them for about two minutes in the coconut oil. You’ll be able to smell the aroma. Remove the skillet from the heat before the garlic starts to turn brown.
Ring out the liquid from the defrosted frozen spinach. Once most of the liquid has been removed, mince the spinach. Combine the garlic, onion, spinach, and the remainder of the ingredients in a medium-size mixing bowl. Make sure all the ingredients are mixed together well. Then, form the mixture into patties.
Grill or sauté burgers on medium heat until cooked through (internal temperature should be a minimum of 160 degrees with a meat thermometer). Serve and enjoy!
What to serve with Greek chicken burgers
To complete your meal, there are many sides to choose from that are AIP-friendly. Since Greek is the theme of the burgers, you can’t go wrong with adding a tzatziki sauce on the top. A thick AIP compliant coconut yogurt, cucumber, fresh dill, lemon juice, and a garlic clove are all you need to whip up this sauce from scratch. Season with sea salt to taste.
Of course, burgers are always better with french fries, so these garlic sweet potato fries are a perfect side for this dish. Just omit the black pepper and paprika for the AIP version.
This Greek Salad can also easily be made AIP-compliant by omitting the chickpeas, peppers, tomatoes, and black pepper and including extra cucumbers and adding some sliced radishes for zing and hearty artichoke hearts for some satisfying starch.
Or, if you’d like to stick with simple fresh veggies, choose a few of your favorites to slice up and have on the side. Drizzle a bit of olive oil, a squeeze of lemon, and a sprinkle of salt.
Meal planning with Greek chicken burgers
When preparing this meal, we recommend at least doubling the recipe to have leftovers. You can also prepare the burger mixture and store it in an airtight container for up to 2 days. Cooked burgers can be stored in the fridge for up to 4 days.

Ingredients
- 4 cloves garlic
- 4 green onions
- 1 tbsp. avocado oil, or fat or choice
- 15 oz frozen spinach
- 1 1/2 lb ground chicken
- 1 1/2 tsp. dried oregano

Instructions
- Mince the garlic and chop the green onions.
- In a sauté pan heat oil to medium heat. Add garlic and green onions and sauté until for about 2 minutes to release the flavors. Do not let the garlic brown. Remove from heat.

- In a mixing bowl, combine garlic, onion, spinach, ground chicken, oregano, basil, and sea salt. Form into patties.

Even my kids liked it. This was super easy to pull together and 3 out of 4 kids liked it. My 6 year old came to the table and said disgustedly “What did you do to the chicken!?!?!”.
