Who doesn’t love a good tuna melt? But sometimes – or for you, perhaps all of the time – bread is off the menu. In which case, try serving your tuna over kale.
Yes, kale is green. But it’s also hearty. Cooked with butter and paired with melted cheddar cheese, you may not even remember that your favorite tuna melt came sandwiched between two pieces of bread. Instead, it will be tuna melt plus kale, forever. All day, every day.
A quick note about tuna: According to the Environmental Working Group, it’s a risky choice. Especially for pregnant mamas and small humans. This has to do with the mercury levels in tuna. Tuna Melt Over Kale
- 1 onion
- 1 bunch kale
- 8 oz cherry tomatoes
- 4 oz cheddar cheese
- 1 tbsp. butter
- 10 oz canned tuna
- sea salt, to taste
- ground black pepper, to taste
- Peel and dice onion. Remove stems from kale and roughly chop. Slice tomatoes in half. Shred cheese.
- Heat butter in a pan over medium-high heat. Add onions, and saute until translucent, about 5-7 minutes. Add kale, and cook until starting to wilt. Add tuna and cheese, cover, and cook until cheese is melted and tuna is warmed through.
- Top with cherry tomatoes, and salt and pepper, to taste. Serve and enjoy!
