Tuna Melt Over Kale

Ingredients
- 1 onion
- 1 bunch kale
- 8 oz cherry tomatoes
- 4 oz cheddar cheese
- 1 tbsp. butter
- 10 oz canned tuna
- sea salt, to taste
- ground black pepper, to taste
Instructions
- Peel and dice onion. Remove stems from kale and roughly chop. Slice tomatoes in half. Shred cheese.
- Heat butter in a pan over medium-high heat. Add onions, and saute until translucent, about 5-7 minutes. Add kale, and cook until starting to wilt. Add tuna and cheese, cover, and cook until cheese is melted and tuna is warmed through.
- Top with cherry tomatoes, and salt and pepper, to taste. Serve and enjoy!
