Sushi and AIP compliant? If you thought those two words didn’t go together, think again. These salmon and seaweed roll ups skip the traditional rice and processed sauces in favorite of lemon juice and creamy avocado.
Serve alone for a simple lunch or next to this delicious Thai Coconut Soup for a full meal. Feel free to use any produce you have on hand including zucchini, spinach, or even mango for a different flavor profile.
Salmon and Seaweed Roll Ups (AIP)

Ingredients
- 1 lb salmon fillet, 4 ounces per person
- 1 cucumber
- 2 avocados
- 8 nori sheets
- 1/2 c shredded carrot
- 1 tsp. sea salt, to taste
- 2 tbsp. lemon juice
Instructions
- Cook the salmon by pan-searing for 3-4 minutes each side until cooked to your desired doneness or an internal temperature of 145F is reached.
- While the salmon is cooking, thinly slice cucumber. Peel, pit, and slice avocados.
- Flake salmon apart into pieces.
- Assemble each roll by placing a nori sheet on your plate, adding salmon flakes, cucumber, avocado, carrots, salt, and lemon juice. Roll up the sheet.
- Repeat with remaining nori sheets. Enjoy!

Am I missing a step? Love the concept, but I felt like I was missing a step here or there.

Absolutely loved it! This was a hit with the whole family. I am on AIP diet. For my husband and kids I served it with regular rice. I used cauliflower rice for myself. For the kids, I just put each ingredient on the place and didn’t wrap it up in nori, but for me and my husband I wrapped it up like a burrito in the nori sheet and it was delicious. We used coconut aminos in place of soy sauce. Will be making again!

They were okay. I’m not sure that the goat cheese enhanced flavor. The salmon probably could have used some seasoning.
