Cassava pumpkin snickerdoodles are everything they should be: crunchy on the outside, soft on the inside, and filled with the flavors of cinnamon and vanilla.

Cassava Pumpkin Snickerdoodles


For the snickerdoodles:

  • 1 1/4 c cassava flour
  • 1/3 c pumpkin puree
  • 2/3 c coconut sugar
  • 1/2 c palm shortening
  • 1/3 c honey
  • 1 tbsp. vanilla
  • 1 tsp. gelatin
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. sea salt

For the topping:

  • 1/4 c cane sugar
  • 1 tsp. cinnamon


  1. Preheat oven to 375F and line a baking sheet with parchment.
  2. Combine all cookie ingredients and mix well. In a separate bowl, stir together cinnamon and sugar.
  3. Form dough into small balls and roll in the cinnamon sugar until very well coated. Bake for 11-13 minutes, or until golden brown. Allow to set for at least 5 minutes.
