Our breakfast hash is a delicious and simple one-skillet wonder that takes all of 20 minutes to prepare. Easy enough to pull together before you rush out the door and perfect for a lazy Sunday morning.
While we’re not promising you’ll have leftovers – if you do, roll the hash in Yuca Plantain Flatbread (AIP) with a smattering of fresh arugula for a quick and scrumptious lunch.

Ingredients
- 1 sweet potato, large
- 1 onion
- 1 1/2 tsp. extra virgin olive oil
- 2 tsp. minced garlic
- 1/2 lb ground pork
- 1 1/2 tsp. pure maple syrup, optional
- 1/2 tsp. dried sage
- 1/2 tsp. dried rosemary
- 1/8 tsp. cinnamon
- 1/8 tsp. ground ginger
- 3/4 tsp. sea salt, plus more to taste
- 8 oz spinach
Instructions
- Peel and chop sweet potato and onion.
- In a skillet, sauté oil and garlic over medium heat for 1 minute.
- Add in chopped sweet potato and stir.
- After 4-5 minutes, add in onion.
- Let sauté for about 5 minutes, stirring occasionally.
- Mix in ground pork, syrup, sage, rosemary, cinnamon, ginger, and salt. Break sausage into small pieces as you stir. Cook until until the sausage is no longer pink.
- Mix in fresh spinach, and cook for 2-3 minutes, or until sautéed.
- Remove skillet from heat and serve hot.

Surprisingly good! Very good mix of flavors, a major improvement over sad, bland “diet” food. This is not the dish to try when you are in a rush to leave for work or school– it’s very labor-intensive to wash, peel, chop, and prep all the veggies (and cook those sweet potatoes and sausage a little longer–we Southerners like them *cooked*).
