Roasted Red Potatoes
- 1 lb baby red potatoes
- 2 tbsp. extra virgin olive oil
- 1 1/2 tsp. sea salt
- ground black pepper, to taste
- Preheat oven to 375F. Cut potatoes into quarters.
- In a roasting pan, toss potatoes with oil and season with sea salt and pepper.
- Spread the potatoes evenly in the pan and roast for about 20 minutes.
- Turn the potatoes and bake for an additional 15 minutes.
- Remove from oven and serve.
