When making sushi at home, keep these few tips in mind. You want a thin layer of rice and filling on the nori sheet or you may end up with rolls that won’t close or fall apart. Keep a bowl of water handy to keep rice from sticking to your fingers. Now you are ready to roll!

Ingredients
For the rice:
- 1 c white basmati rice
- 1 1/2 c vegetable stock
For the roll-ups:
- coarse sea salt, to taste
- 4 oz goat cheese
- 8 roasted seaweed sheets
- 1 carrot
- 1 cucumber
- 4 avocados
- fresh ground black pepper, to taste
Instructions
For the rice:
- Rinse rice well.
- Cook in chicken stock until light and fluffy.
- To reheat later, add to a pan with a small amount of filtered water. Cover and cook over medium heat, occasionally using a wooden spoon to break apart until uniform and hot.
For the roll-ups:
- Slice the avocado and cucumber, and grate the carrot.
- Warm rice with a splash of water.
- Assemble your roll by placing the nori sheet on your plate, adding rice, avocado, carrots, and goat cheese crumbled on top.
- Garnish with salt and pepper, roll and enjoy!
