- 6 brown plantains, ripened
- 4 tbsp. extra virgin olive oil
- 2 tsp. sea salt
- 1/2 tsp. paprika
- Preheat oven to 400F.
- Peel plantains and cut on a diagonal about 1/2 inch thick.
- Place in a large bowl; toss with oil, sea salt, and paprika.
- Line a rimmed baking sheet with silpat or parchment paper and arrange the plantain pieces on the baking sheet in a singer layer.
- Bake for 20 minutes, using a spatula to flip pieces over halfway through cooking.
