Ingredients

  • parchment paper
  • 1 inch fresh ginger

  • 4 green onions
  • 1/4 bunch cilantro

  • 2 tbsp. miso paste

  • 2 tbsp. white wine

  • 1 tbsp. fish sauce
  • 1 1/2 lb salmon fillets
  • 1 tbsp. toasted sesame seeds

Instructions

  1. Position oven rack in upper third of oven; preheat broiler. Line a baking pan with parchment paper. Peel and mince ginger, slice green onions thinly, and chop cilantro.
  2. Whisk miso, white wine, fish sauce, and ginger in a small bowl until smooth.
  3. Using a sharp knife, slice salmon into serving portions. Use tweezers to remove any visible bones.
  4. Place salmon fillets, skin-side down, in the prepared pan. Brush generously with miso mixture.
  5. Broil salmon, 3-4 inches from the heat source, until opaque in the center with an internal temperature of 145F, 6-8 minutes.
  6. Serve immediately garnished with the sesame seeds, green onions, and cilantro.
