Ingredients

- 1 onion
- 8 oz sliced mushrooms
- 4 oz cream cheese
- 2 tbsp. butter
- 2 tsp. minced garlic
- 1 lb ground beef
- 2 tbsp. soy sauce
- 1 tbsp. hot sauce
- 1 tbsp. Worcestershire sauce
- 1 tsp. sea salt
- 1 tsp. ground black pepper
- 2/3 c beef broth
- 2 c mixed vegetables
- 32 oz tater tots
- 1 c shredded cheddar cheese
Instructions
- Preheat oven to 450F, or the recommended temperature on tater tot package. Lightly grease a baking pan with cooking spray.
- Peel and finely dice onion. Dice mushrooms or leave sliced, if preferred. Cut cream cheese into cubes.
- Melt butter over medium-high heat in a large, sided skillet. Add onions, garlic, and mushrooms. Cook until browned, about 8 minutes.
- Add ground beef. Using a spatula, break up beef as it browns.
- When beef is cooked, add in soy sauce, hot sauce, Worcestershire sauce, salt, and pepper. Stir well to combine.
- Stir in cream cheese. Once it is melted, add in beef broth. Cook for 2-3 minutes to allow sauce to thicken slightly. You want sauce to coat the back of a spoon but not get too thick. Add a little more broth, if needed.
- Add veggies and mix well. Taste filling and adjust seasonings.
- Pour filling into prepared baking pan. Place frozen tater tots on top of mixture. Lay them in rows so they will fit in one, even layer.
- Place in oven and cook for 16-18 minutes, or as directed on tater tot package. You can add up to 5 additional minutes if you want the tater tots extra crispy.
- Sprinkle cheese on top and cook for 5 more minutes, until cheese is melted.
- Let sit for a few minutes before serving. Enjoy!
