Zoodles are the versatile gut-friendly cousin of noodles. And they do delicious things when added to soup. Chicken Zoodle Soup

Ingredients
For the zoodles:
- 8 medium zucchinis
- coarse sea salt
For the soup:
- 2 sprigs fresh rosemary
- 2 qt chicken stock
- 1 1/2 tsp. coarse sea salt, plus more to taste
- 2 tbsp. bacon fat, or olive oil
- 2 c cooked chicken
- 1 lemon
- 2 bunches kale
- 4 carrots
- 3 cloves garlic
- 1 onion
Instructions
For the soup:
- Peel and chop the onion. Mince the garlic. Dice the carrots. Remove stems from kale, and mince. Juice the lemon. Shred the chicken.
- Heat fat over medium heat in a large soup pot.
- Add onion, garlic, carrots, sea salt. Cook and stir until veggies are softened.
- Pour in broth and rosemary and bring to a boil.
- Reduce heat to low, then add the zucchini noodles and kale.
For the zoodles:
- Simmer 5 minutes then add chicken and lemon juice.
- To make zucchini noodles, either purchase a julienne peeler or a spiral cutter, OR simply use a sharp knife to cut the zucchini first lengthwise into strips, then slice those strips as finely as possible into spaghetti-like pieces.
- Sprinkle some sea salt over the zoodles and let them sit for 25 minutes in the sink to sweat out excess water. After the 25 minutes, rinse and pat them dry with a paper towel.
- Use raw or cook in a large pan over medium heat for about 2 minutes, to allow the zoodles to soften slightly. Remove from heat and serve.
For serving:
- Remove rosemary sprigs and serve hot.

This soup was very tasty especially with Chicken Bone Broth. It did fail to mention when to add the chicken, though. Since the ingredients called for cooked chicken, I added it with the Kale and it was warmed just fine.
