They have more vitamin A and C than almost any other single fruit, veggie, or root. They contain choline and manganese which are both essential to our brain health. But really, you can just taste the goodness.
When I do Whole30 and I am craving carbs and sugar, the sweet potato comes to the rescue. It’s a perfect balance of sweet and starchy. It’s just plain good.
This version of Sweet Potato Mash takes it one step further by adding a touch of cinnamon so you can fill your whole house with the smell of Autumn.

Cinnamon Mashed Sweet Potatoes (Whole30)

Ingredients
- 6 sweet potatoes
- 1/2 c coconut oil
- 1/4 tsp. ground cinnamon
- 1 tbsp. coarse sea salt, plus more to taste
Instructions
- Peel and chop the sweet potatoes.
- Add the potatoes to a large pot and cover with filtered water. Bring to a boil over medium-high heat. Reduce the heat and simmer or until the potatoes are tender, about 15-20 minutes; drain well.
- Return the potatoes to the pot and add the oil, cinnamon and salt. Beat at medium-low speed with an electric mixer until smooth. Transfer to a serving dish, add additional salt to taste, and serve hot.
