Prosciutto Wraps with Cucumber, Tomato, and Goat Cheese

Ingredients
- 1 large cucumber
- 3 ripe tomatoes
- 16 slices prosciutto
- 8 oz goat cheese
- sea salt, to taste
- ground black pepper, to taste
Instructions
- Remove goat cheese from the fridge to soften.
- Slice tomatoes thinly. Peel and thinly slice cucumbers.
- Lay out prosciutto slices and spread with goat cheese.
- Stack the wraps on one end with tomatoes and cucumber.
- Season with salt and pepper.
- Roll up tightly and serve.
