Ingredients
For the chicken
- 1 1/2 lb chicken breasts
- 1 tsp. minced garlic
- 2 tbsp. lime juice
- 3 tbsp. extra virgin olive oil
- 1 1/2 tsp. sea salt, to taste
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
For the fajitas
- 1 onion
- 3 bell peppers
- 2 tbsp. extra virgin olive oil
- 8 coconut flour tortillas
- 1/2 c guacamole, optional
Instructions

For the fajitas
- Cut chicken into thin strips.
- Combine chicken, garlic, lime juice, olive oil, and seasonings in bowl or ziptop bag. Let marinate for 30 minutes, or up to 8 hours in the refrigerator.
- Peel and slice onion. Slice bell peppers.
- Add 1/2 of the oil to a skillet. Working in batches as needed, add chicken and cook until just cooked, about 4-7 minutes. Remove chicken from pan.
- Add remaining oil to the pan, along with onions and peppers. Cook another 3-5 minutes, until hot and slightly softened. Add chicken back to the pan and stir to combine. Make sure chicken is cooked until an internal temperature of 165F is reached.
- Serve chicken fajitas in tortillas with guacamole.
