Well known as a recipe to serve when entertaining, chicken marbella is easy to prepare in advance and simply pop in the oven when the guests arrive. Even with no prep in advance, this dish goes from fridge to table in less than 30 minutes.
Not a fan of prunes? Swap them for dried apricots or figs for a fresh take on the original version.
Chicken Marbella

Ingredients
- 3 oz green olives
- 1/2 c prunes
- 1 1/2 tsp. minced garlic
- 1 lb boneless chicken thighs
- 1 tbsp. extra virgin olive oil
- 1/8 c balsamic vinegar
- 1/8 c red wine vinegar
- 2 oz capers
- 1 1/2 tsp. dried oregano
- 1 bay leaf
- 1/2 tsp. sea salt, to taste
- ground black pepper, to taste
Instructions
- Preheat oven to 350F. Pit green olives and prunes.
- Combine all ingredients in an oven safe baking dish. Season with sea salt and a few grinds of black pepper. Flip the chicken pieces over a few times to make sure they are coated in the mixture.
- Bake for 25 minutes or until done; remove from oven and serve. The chicken is done when a meat thermometer is inserted and reads 165F.
