Greek Rice with Lemon, Spinach, and Dill

Ingredients
- 1 c brown rice
- 1 1/2 c chicken broth
- 1/4 onion
- 1 1/2 tbsp. fresh dill
- 12 oz spinach
- 2 tbsp. extra virgin olive oil
- 1/3 tsp. sea salt, or to taste
- 1/4 tsp. ground black pepper, plus more to taste
- 1/2 lemon
Instructions
- Cook rice in chicken broth according to package instructions until light and fluffy.
- Peel and mince the onion. Mince dill. Roughly chop the spinach.
- Meanwhile, in a pan over medium high heat, sauté onion in olive oil, salt and pepper until translucent.
- Add chopped spinach and dill and cook until the greens are just wilted.
- Stir rice into spinach mixture. Squeeze lemon on top and stir; add additional salt and pepper to taste, and serve.
