Our breakfast hash is a delicious and simple one-skillet wonder that takes all of 20 minutes to prepare. Easy enough to pull together before you rush out the door and perfect for a lazy Sunday morning.

  • 1 large sweet potato
  • 1 onion
  • 2 green bell peppers
  • 1 tomato
  • 1/2 lb sausage
  • 1 1/2 tsp. extra virgin olive oil
  • 2 tsp. minced garlic
  • 1 1/2 tsp. sea salt, plus more to taste
  • ground black pepper, to taste
  • 8 oz spinach


  1. Peel and chop sweet potato and onion. Finely chop the green pepper and tomato. Remove sausage from casing.
  2. In a skillet, sauté oil and garlic over medium heat for 1 minute.
  3. Add in chopped sweet potato and stir.
  4. After 4-5 minutes, add in peppers, onion, tomato, salt, and pepper.
  5. Let sauté for about 5 minutes, stirring occasionally.
  6. Mix in sausage, breaking it into small pieces as you stir. Cook until the sausage is no longer pink.
  7. Mix in spinach and cook for 2-3 minutes, or until sautéed.
  8. Remove skillet from heat and serve hot.
