Spiced Pear and Toasted Walnut Yogurt

Ingredients
- 4 pears, firm
- 1 c walnuts
- 2 tbsp. extra virgin olive oil
- 2 tsp. cinnamon
- 1/2 tsp. cardamom
- 1/2 tsp. ground ginger
- 1/4 tsp. sea salt
- 1 tsp. vanilla
- 4 c Greek yogurt
- 2 tbsp. honey, plus more for drizzling
Instructions
- Core pears and cut into chunks. Chop walnuts.
- Heat a medium-sized skillet over medium heat. Add walnuts to dry pan. Toast for 5-8 minutes until walnuts are fragrant and just starting to brown. Watch carefully because they will burn quickly. Remove from skillet and set aside.
- Heat olive oil in skillet over medium-high heat. Add pears and cook, stirring occasionally, for 10-12 minutes. Pears are done when they are tender and have some browning. Drain any excess liquid from pears and place in a bowl.
- Add cinnamon, cardamom, ginger, salt, and vanilla to pears. Stir to combine. Let cool to slightly warm or room temperature.
- Place yogurt in a mixing bowl, add honey, and stir. Taste and adjust sweetness to your liking.
- Divide yogurt among serving bowls, top each with pears and walnuts. Drizzle additional honey over top of each bowl, if desired. Enjoy!
