Ingredients

  • 1 lb purple cauliflower, florets
  • 3 tbsp. garlic-infused oil, made with olive oil - purchased or homemade
  • 2 tsp. garlic-infused oil, made with olive oil - purchased or homemade
  • kosher salt
  • freshly ground black pepper
  • 2 oz shredded parmesan

Instructions

  1. 1. Bring a pot of water to a boil and cook cauliflower until just tender (or steam for a softer texture). Pat completely dry.
  2. 2. Toss with 3 tablespoons garlic-infused oil, salt, and pepper.
  3. 3. Use 2 tsp of garlic-infused oil to lightly oil a sheet pan and smash each floret flat with the bottom of a glass.
  4. 4. Roast at 425°F for 15 minutes.
  5. 5. Remove, sprinkle with parmesan, and roast for another 5-8 minutes until cheese is browned and crispy. Serve immediately!
