Don’t let the simple ingredient list fool you – these avocado quesadillas will make you want to polish off the whole batch without sharing. Serve with a side of homemade refried beans or this Mexican street corn for a fun weeknight meal.
If you’ve never heard of sprouted corn tortillas, they are gluten free unprocessed alternative for flour tortillas. Look for an ingredient list that simply includes sprouted corn, water and salt for the closest version to homemade tortillas.
Avocado Quesadillas

Ingredients
- 2 avocados
- 8 oz mild cheddar cheese
- 4 tbsp. butter
- 1 dozen sprouted corn tortillas
- coarse sea salt, to taste
Instructions
- Peel and slice the avocado. Shred the cheese.
- Heat half of the butter in a large pan over medium high heat.
- When foaming, place a single layer of tortillas in the pan, top with a proportionate amount of cheese to account for all of the quesadillas.
- Cover and cook until cheese is melted.
- Add avocado slices, a sprinkle of sea salt, and another tortilla, then flip and grill just until the tortilla is softened or lightly browned. Repeat with the remainder of the tortillas and ingredients.
- If desired, you can keep the quesadillas warm on a plate in an oven set to warm while you prepare the other quesadillas.
