Ingredients
- For the veggies:
- 1 head romaine
- 1 cucumber
- 2 Roma tomatoes
- 1/4 red onion
- 1/2 c kalamata olives
- 1/2 c pine nuts
- For the dressing:
- 2 tsp. fresh basil
- 2 tsp. fresh oregano
- 1/2 lemon
- 1 tsp. minced garlic
- 1/4 c extra virgin olive oil
- 2 tbsp. red wine vinegar
- 1 tsp. Dijon mustard
- 1/2 tsp. honey
- 3/4 tsp. sea salt
- 1/4 tsp. ground black pepper
Instructions
- For the veggies: Wash and tear romaine lettuce into bite-sized pieces. Quarter and slice the cucumber into chunks.
- Dice the tomatoes. Peel and finely chop the onion.
- Add all the ingredients into a serving bowl and mix well.
- For the dressing: Wash and chop the basil and oregano. Juice the lemon.
- Mix all the ingredients in a mason jar and shake.
- Toss dressing with the salad ingredients and serve.
