Pizza doesn’t always have to be covered in tomato sauce and lots of meat. Try this yummy vegetarian sweet potato, kale and goat cheese pizza for your next pizza night.

Start with our easy homemade crust, then top it with a sweet potato sauce, sauteed kale and tangy goat cheese crumbles. Want a little variety? Use the crust to make calzones instead of pizza!

Ingredients

For the crust:

  • 3 tbsp. extra virgin olive oil
  • 1 tbsp. dried oregano
  • 1 tbsp. dried basil
  • 1 1/2 tsp. coarse sea salt
  • 3 c sprouted wheat flour
  • 1 packet dry active yeast
  • 1 1/4 c warm filtered water
  • 1 1/2 tsp. raw honey

For the toppings:

  • 1 large sweet potato
  • 2 tbsp. parmesan cheese
  • 2 cloves garlic
  • 3 tbsp. extra virgin olive oil
  • 1 bunch kale
  • 1/4 tsp. crushed red pepper flakes, plus more to taste
  • 1/4 c goat cheese
  • coarse sea salt, to taste

Instructions

  1. For the dough: Stir the honey into the warm (not hot) water until dissolved.
  2. Add the dry active yeast to the warm honey water and allow to sit for about 10 minutes or until the yeast begins to bubble.
  3. Add the sprouted flour, sea salt, basil, and oregano and mix well.
  4. Remove the dough from the bowl and knead it into a ball on a lightly floured surface.
  5. Coat dough ball with a thin layer of olive oil, and place back into a large bowl.
  6. Cover the bowl with a dish towel and let it stand for 30 minutes or until the dough doubles in size.
  7. While dough is doubling, prepare toppings. Heat oven to 500F.
  8. Bring a pot of water to a boil. Cook potato in water until fork-tender, 7-10 minutes. Meanwhile, de-stem kale and chop into bite-sized pieces. Shred the Parmesan and mince the garlic.
  9. Remove potato from the pot, and let cool 5 minutes. In a food processor, pulse potato, 1/4 of the oil, red pepper and a pinch of sea salt until sauce is smooth.
  10. In a large pan, add half of the olive oil and heat until very hot. Add the garlic and red pepper flakes. Cook for about a minute to release the flavors, then add the kale and saute until bright green and wilted.
  11. Roll and/or stretch your dough into shape. This is the fun part where you can toss it in the air like at a pizza parlor.
  12. Place your shaped dough on a pizza stone or sheet pan covered with parchment paper.
  13. Bake 8-12 minutes at 500F or until the crust is slightly browned.
  14. Spread sweet potato evenly onto your prepared pizza crust. Crumble goat cheese on top of pizza and sprinkle with kale and Parmesan. Return your pizza to the oven to cook for 3-5 minutes, or until the cheese has melted.
  15. Drizzle with remaining olive oil and sprinkle with sea salt and additional red pepper flakes to your taste. Slice and serve.
