Mac and Cheese

Ingredients

  • 12 oz elbow macaroni
  • 2 tbsp. parmesan cheese
  • 12 oz sharp cheddar cheese
  • 2 tbsp. butter
  • 1/2 c cream
  • 1 c milk
  • 2 tsp. coarse sea salt
  • 1/2 tsp. dry mustard
  • 1/2 tsp. ground black pepper

Instructions

  1. Cook pasta according to instructions. While pasta is cooking, grate cheese.
  2. Once pasta is al dente, make sure to reserve about 1/2 cup of the pasta water. Then drain the cooked pasta and rinse thoroughly with cool water. Set aside.
  3. Using the same saucepan, over medium heat, melt the butter and add the cream, milk and cheese. Stir constantly until smooth and creamy. Then mix in the dry mustard, salt and pepper.
  4. Add the pasta to the cheese sauce and stir well to combine. To thin out the sauce, add one tablespoon at a time of the reserved pasta cooking water while stirring, until desired consistency is achieved. Enjoy!

  • This was a disaster. Soupy with clumps of melted cheese. Followed the recipe exactly. Used raw milk and blocks of cheese. Help, please!


  • So much better than from a box! This recipe is delicious. It takes a bit of work to be sure the cheese melts fully. I definitely recommend using shredded cheese. The consistency will stay a bit stringy, but the flavor is fantastic. I like to add maybe half a teaspoon of turmeric as well for both flavor and the health benefits.
