Ingredients
- 3 c cooked turkey
- 3 eggs
- 1/2 c milk
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
- 8 bread slices
- 6 tbsp. cranberry sauce, plus more for serving
- 4 tsp. Dijon mustard, to taste
- 8 cheddar cheese slices
- 4 tbsp. butter, plus more as needed
- 2 tbsp. powdered sugar, optional
Instructions
- Slice or shred turkey, if needed. Beat eggs, milk, salt, and pepper in a shallow dish until thoroughly combined.
- Lay bread out on work surface. Spread half the slices with 1/4 of the cranberry sauce on each slice. Spread the other half with 1/4 of the Dijon mustard, or to taste.
- Place a slice of cheese on each piece of bread. Top half the slices with turkey.
- Place remaining slices of bread on top of each sandwich and give them a good squish to compact them.
- Melt butter in a skillet over medium heat.
- Dip each sandwich in egg mixture. Once sandwich is fully coated, place in hot pan. Repeat with remaining sandwiches.
- Don't overcrowd pan; the sandwiches may need to be cooked in batches. Add more butter as needed.
- Cook sandwiches for approximately 5 minutes on each side. Press down on sandwiches with spatula as they cook.
- They are done when they are golden brown and cheese is melted. Remove to serving plates.
- Place powdered sugar in a fine-mesh sieve and gently tap the side to sprinkle a dusting of sugar on top of each sandwich.
- Serve with extra cranberry sauce on the side, if desired. Enjoy!
