Strawberry Popsicles with Chocolate Shells

Ingredients
For the popsicles:
- 2 1/2 c strawberries, fresh or frozen
- 1 banana
- 1 apple
- 4 oz full fat coconut milk
- 1 tbsp. honey
For the chocolate coating:
- 10 oz dark chocolate
- 1/4 c coconut oil
Instructions
For the popsicles:
- Defrost strawberries if frozen. Peel banana. Peel, core, and chop apple.
- Blend fruits, coconut milk, and honey in a blender.
- Pour mixture into popsicle molds.
- Freeze for a minimum of 6-8 hours.
For the chocolate coating:
- If using solid chocolate, break into chunks and put in a large coffee mug or bowl with coconut oil.
- If using chocolate chips, put as is in the mug or bowl with the oil.
- Put mug or bowl in a saucepan with water reaching halfway up the side of the mug or bowl.
- Heat the water almost to a boil, stirring the chocolate as the water heats it.
- When popsicles are completely frozen, dip them in the melted chocolate. Wait 30 seconds, and dip again. Wait a minute for chocolate to cool and harden before eating.
- Extra chocolate can be stored in the refrigerator and reheated for later dipping.
