Well, now you can recreate some of your favorite dishes starting with this pancit that we’ve modified oh-so-slightly to be friendly to an autoimmunity protocol diet. But if you don’t have dietary restrictions, don’t turn away – this dish is deliciously packed with satisfying flavors.

That sweet, salty crunch of cabbage noodles dressed with coconut aminos, fish sauce, and garlic has us feeling all the feels of a favorite comfort food dish.

Ingredients

  • 2 tbsp. coconut oil
  • 3 cloves garlic
  • 1 bunch green onion
  • 4 carrots
  • 1 head green cabbage
  • 1/2 lb chicken breast, or boneless chicken thighs
  • 1/2 lb shrimp
  • 2 c cooked pork
  • 1 tsp. coarse sea salt
  • 3 tbsp. coconut aminos, plus more to taste
  • 3 tbsp. fish sauce, plus more to taste
  • 1/4 c chicken stock
  • 1 lemon

Instructions

  1. In a wok or large pan heat the coconut oil over medium high heat.
  2. Mince the garlic, dice the onions, grate carrots and slice the cabbage into ribbons.
  3. Add the garlic, cabbage, whites of onions, and carrots and cook for about 10-15 minutes, until cabbage is tender.
  4. Chop chicken into 1/2 inch cubes. Remove tail and shells and devein shrimp. Chop pork into ½ inch pieces.
  5. Add the chicken and sauté with the raw shrimp and sea salt. Cook until shrimp are pink.
  6. Add the pork, coconut aminos, fish sauce, onion greens, chicken broth. Cook just until heated through and well combined.
  7. Finish with a squeeze of lemon to taste and extra fish sauce to taste.
