This recipe for chicken and bacon with spinach has only three ingredients. And chances are, they’re in your fridge right now.

What makes this dish great: It takes a mere 20 minutes to pull together. You’ll taste an explosion of good, #becausebacon. Crispy bits of chicken can certainly hold their own. And spinach – well, spinach gives a toothsome bite of green with some plant power.

Chicken and Bacon with Spinach

Ingredients

  • 8 oz bacon
  • 1 1/2 lb chicken breasts, or use leftover chicken from previous meal
  • 1 bunch spinach
  • sea salt, to taste
  • ground black pepper, to taste

Instructions

  1. In a large skillet over medium high heat, fry the bacon until crispy.
  2. While the bacon is cooking, prepare the chicken. If you are using raw chicken breasts, chop into one inch cubes. If you are using leftover chicken, remove from the bones and shred using your fingers.
  3. When bacon is crispy, remove to a paper towel-lined plate to drain. Pour most of the bacon grease (leave about 3 T.) through a fine metal sieve into a clean mason jar. Allow to cool on the countertop to room temperature, then cover and store in the fridge to use for frying in a future meal.
  4. Add the chicken to the remaining bacon grease and saute until cooked through (just until warm if using leftover chicken). When cooked through, add spinach and cover for a few minutes until spinach is tender.
  5. Stir bacon into chicken and spinach, then add salt and pepper to taste.

  • Simple, easy and good. Not an “amazing” recipe… but simple, good, tasty, quick and easy. I would add, onions and garlic – maybe even mushrooms – to give it power and more mouth appeal.


  • My husband can even make it. My husband made this exactly as written. It was simple and decent. Everyone ate it with no complaints. Next time I’ll add onions, garlic, and cheddar cheese. Sun-dried tomatoes would be yummy too.


  • Added pizzazz. It was ok, so I took a nod from my favorite local pizzeria and added garlic to saute spinach instead, added artichoke hearts to chicken. For my kiddo, I served it over some penne noodles.


  • “You can make this anytime Mom”. It was a yum vote from picky kids and husband. That said, I added seasonings to our taste (garlic, salt, pepper, red peppers) and served it over sprouted brown rice. It’s good with frozen baby kale too.


  • Simple and delicious! I pan fried the chicken with salt, pepper, garlic powder and onion powder. We atr it with brown rice and arugala salad. Yummy!


  • I thought I might say like the others that it needs something but honestly it is just basic and delicious. The only change was I sauteed the spinach in bacon grease. You can add but don’t need to.
